Here is another low carb recipe which is simple and easy to make, not forgetting very delicious too!
Preparation circa. 15 mins (plus 30 mins cooling time) for 4 person
Ingredients
8 Herrings fillet
2 red onions
2 apples
1/2 of a whole cucumber
150 ml sweet cream
250g curd cheese (soft)
Salt to taste
Pepper
Lemon juice
1 teaspoon mustard
1. Clean the fillet and use a paper towel to dry. Cut into bite size pieces. The onions cut into rings. Peel off the skin of the apples and cucumber, cut into half and take out the seeds which will then to be cut into small cubes.
2. Beat the cream till stiff and mix it with the cheese, followed by the onion rings, cucumber and apple cubes. Mix really well. Add in salt and pepper to taste, lemon juice and mustard.
3. Lastly, mix in the fish fillet and wait for 30 minutes in the refrigerator to let cool.
Tips: You can serve this meal with potatoes or bread. Taste even better when left in the fridge till the next day.

Hi there people,
I thought I should post something here. I will be putting in some recipes (healthy food for the weight conscious out there) consisting of low carbs.
This recipe will be based on a recipe book I bought a few months ago and I am yet to share it with you.
No worries, if some of you are interested to have the book instead, stay tune real soon – I will let you know. Just a short update and to tell you all peeps that I am still very much alive… and you know what – I lose another 2 lbs from the last post I made. Hooray!!!
Remember, cut down your sugar intake!! it sure do helps – a lot! Reward yourself once a week, and eat moderately from day 1 – day 5 and lots of vegetables and fruits. Cut down on carb too!
Strawberry Cups

This is a good make-ahead company dessert and it’s a really beautiful color.
1 cup water
1 package (4 serving size) sugar free lemon gelatin
10 ounces frozen unsweetened strawberries, partly thawed
1 cup heavy cream
1/2 teaspoon vanilla extract
1 teaspoon Splenda if desired
1. Bring the water to a boil. Put the gelatin and boiling water in a blender and whirl for 1 to 15 seconds to dissolve the gelatin. Add the strawberries and whirl again, just long enough to blend in the berries.
2. Put the blender container in the refrigerator for 10 minutes, or just until the mixture starts to thicken a bit.
3. Add 3/4 cup of the heavy cream and run the blender just long enough to mix it all in (10 to 15 seconds). Pour into 5 or 6 pretty little dessert cups and chilli. Whip the remaining 1/4 cup of cream with the vanilla and a teaspoon of Splenda (if using) to garnish.
Yield : About 5 servings, each with 6 grams of carbohydrates and 1 gram of fiber, for a total of 5 grams of usable carbs and 3 grams of protein.
